Wine-making / Breeding : Spontaneous barrel fermented using 50% new 225l French oak barrels; 35% malolactic. Bottled after 6 months in oak.

Terroirs and soils : 50% marine; 50% high altitude

Tasting Robe : Lemony mid-yellow
Tasting Nose : Complex nose with citrus, peach blossom and tropical notes
Tasting Palate : Long full palate, some minerality, great texture, toasted almonds
pairing : Fresh mint salad with toasted black and white sesame seeds, rock salt, char grilled baby courgettes, poached tomatoes and pink grapefruit
Cellaring : 5-7 years
