Very mineral on the nose, sparse, focused, austere, salty, elegant, on the palate orange zest, pineapple, flint, full body, beautiful harmony, lots of pressure, delicate bready-nutty, roasted notes, a hint of coffee, very ripe apple, very long finish. A strong chardonnay with lots of mineral and little wood.
Pairing: French cuisine from quiches to bright game birds such as partridge or guinea fowl, marine fish and shellfish, oysters, pasta with creamy mushroom sauces.
The grapes come from a vineyard at the foot of the Anningers with some more than 50 years old vines. They have a weak growth and small berries. - that's why there is little yield but very aromatic grapes. Fermentation in steel tank, aging for one year in used barriques.
