Pale and clear. Pronounced aromas. This complex Chardonnay has a fragrance reminiscent of aromatic Cox Orange apple, fresh quince, citrus fruit, and salted almond. A veil of cool smoke wraps around a touch of orange liqueur and beeswax. This broad spectrum of aromas and flavours continues on the palate where a refreshing core of acid provides vitality and elegance.
Pairing: With braised veal, venison and feathered game.
Vineyards: Fully ripe grapes from the Sattlerhof exclusive Pfarrweingarten site. Steeply rising slopes, excellent soil structure: shell and coral limestone at an altitude of 365 m above sea level.Certified to organic viticulture AT – BIO 402, selective harvest exclusively by hand in small boxes. Rigorous selection of the ripest beeries from Pfarrweingarten.
Soil: Shell/coral limestone, Opok (a tertiary soil – clay and marl), thin sandy layer. Protected south facing basin location, cultivated solely by Sattlerhof.
Vinification: Fermented and matured on the lees for 18 month in 225 and 300 liter barriques, first and second filling.
